Sweet potatoes grow amazingly well in our zone 6 Missouri gardens. And they store even better than they grow. I can always count on having sweet potatoes through the winter and often into spring each year. Thus, this easy purple sweet potato pie recipe came to be.

Farm to table Dessert for February
It’s not easy to make the switch from buying everything from the grocery store to using more and more of your own home grown food. And so I have been challenging myself to come up with farm to table meals that use only ingredients that our family has grown or produced on our homestead. Sweet potatoes make a wonderful dessert for a February farm to table meal.

The story behind the sweet potatoes
In this recipe, I used beautiful purple sweet potatoes that come from years of doing my own slips and growing sweet potatoes in no dig raised beds. The original potatoes came from Azure Standard. Why No Crust?
Since we don’t yet grow our own grains here on the homestead, I usually make a no crust sweet potato pie and no one really seems to mind that the crust is missing, except for me. I do love a good pie crust.
We also don’t produce many of our spices, herbs, and condiments. So this farm to table challenge does have some exceptions. I used local raw honey to sweeten it, grass-fed butter from Costco, and spices that I bought in bulk from Azure Standard.
Ingredients
Sweet potatoes – You will need about 6 large sweet potatoes to make two small pies. You can also use winter squash or a combination of both.
Eggs – I like to use about one chicken egg per cup of cooked and mashed sweet potato.
Butter – Because butter makes everything better.
Sea salt – This enhances the lovely flavors in the pie. Just a couple good pinches will do.
Spices – Our family loves cinnamon! We also like a bit of ginger. You can spice these up however you like. Just wait to add the eggs until after you taste test the mixture if you don’t like eating raw eggs.
Sweetener – This is optional as sweet potatoes are naturally quite sweet. Sometimes I add a bit of raw honey or maple syrup if it’s going to be used as a dessert.

How to Make Easy Sweet Potato Pie
- Peel and boil about 6 sweet potatoes.
- Stain potatoes and add all other ingredients except for the eggs.
- Mash and mix well with a potato masher.
- Taste to make sure you like the flavor.
- Add the eggs and mix again.
- Smooth mixture into two small pie dishes.
- Bake for 40 – 50 minutes at 350 until firm in the middle.
What to Put On Top Of This Easy Sweet Potato Pie
Although it is quite tasty on it’s own, there are many delicious ways to top this pie. Some of our favorite toppings are apple sauce, a mixture of honey and butter, or best of all, honey sweetened sour cream!

Easy sweet potato pie using beautiful purple sweet potatoes.
Ingredients
- - 5 - 6 cups cooked, mashed sweet potatoes (and/or winter squash)
- - 2 T. butter
- - 6 - 9 eggs
- - 2 T. ground cinnamon
- - 1/4 - 1/2 t. ground ginger
- - 1/4 cup raw honey or maple syrup (optional)
Instructions
- Peel and boil about 6 sweet potatoes.
- Stain potatoes and add all other ingredients except for the eggs.
- Mash and mix well with a potato masher.
- Taste to make sure you like the flavor.
- Add the eggs and mix again.
- Bake for 40 - 50 minutes at 350 until firm in the middle.
- Serve plain, with apple sauce, or with honey sweetened sour cream.
Notes
In general, I use one chicken egg per cup of mashed sweet potatoes. You can add more eggs if you want more protein. Since sweet potatoes are naturally sweet I don't always add extra sweetener.
